Thursday before Easter (Big or Holy Thursday) most women do their Easter baking. Eggs are dyed as well. Traditionally they are died red in memory of the blood of Christ shed at His crucifixion.
For Christians the egg is a symbol of Jesus' resurrection, as when they are cracked open they stand for the empty tomb. Eggs were always thought to be special because although they do not seem alive, they have life within them especially at springtime when chicks hatch out.
Another tradition today is the making of the traditional Easter bread known as tsoureki.
Holy Thursday evening, church services include a symbolic representation of the crucifixion, and the period of mourning begins. In many villages - and in cities as well - women will sit in church throughout the night, in traditional mourning.
